Coconut and Chia seeds make for a creamy and easy anytime breakfast or treat!

Chia Coconut Pud-Pot


  • 2 tbs chia seeds
  • 1/2 cup coconut milk
  • 1 tbs dessicated coconut
  • Optional: Fruit Toppings such as bananas, pineapple or berries
  • Optional: 1/2 tsp vanilla extract and/or 1/2 tsp agave nectar or maple syrup.


  1. Pop your chia seeds in with the coconut milk, stir well and let them soak up that coco goodness for about 20 mins.
  2. Once chia seeds have absorbed some of the liquid, and become gel like, mix in your fruit of choice and sprinkle with dried coconut.
