Coconut and Chia seeds make for a creamy and easy anytime breakfast or treat!
Chia Coconut Pud-Pot
- 2 tbs chia seeds
- 1/2 cup coconut milk
- 1 tbs dessicated coconut
- Optional: Fruit Toppings such as bananas, pineapple or berries
- Optional: 1/2 tsp vanilla extract and/or 1/2 tsp agave nectar or maple syrup.
- Pop your chia seeds in with the coconut milk, stir well and let them soak up that coco goodness for about 20 mins.
- Once chia seeds have absorbed some of the liquid, and become gel like, mix in your fruit of choice and sprinkle with dried coconut.
